Concession Stand Gyro Setup: Concession Equipment for Stadiums and Events

Most concession stand equipment lists cover popcorn machines and hot dog rollers. A gyro stand is a different job. You are cooking a cone in front of a vertical broiler and slicing it to order, often for a crowd that all shows up at halftime.

This guide covers the gyro equipment a concession stand needs, how to size it for short, heavy rushes, and how to keep it running through a full event or season.

What makes gyro concessions different

A restaurant spreads its volume across lunch and dinner. A stand at a stadium, fair or festival can sell most of its food in a few short bursts. That changes how you size equipment:

  • The broiler has to have cooked meat ready when the rush hits.
  • The slicer has to keep up with back-to-back orders without tiring the person holding it.
  • Downtime is expensive. A stopped slicer during a rush is lost sales you can't make back.

The gyro concession equipment list

  • One or more vertical broilers, sized to your biggest cone
  • A high-capacity electric gyro slicer, plus a backup
  • Smooth and serrated blades
  • Sharpeners
  • Spare fuses and small parts
  • Pans, tongs and holding equipment
  • A clear power plan

Vertical broilers for a concession stand

Our gyro grills collection has AutoDoner gas and electric broilers. For big cones, the AutoDoner G400 is listed for large and extra-large cones of 65 lb / 30 kg, and the AutoDoner 3PG for medium to large cones of 45 to 65 lb. Gas models are ordered for natural gas or liquid propane.

The product pages list a lead time of 14 to 16 weeks on AutoDoner broilers, so order before the season, not during it.

Choosing a slicer for event volume

Estimate the meat you slice on your busiest day and pick a slicer rated above it. For concession volume, the high-capacity models are the ones to look at. These are the daily ratings confirmed by Gyrosknife:

UYAR T3120 Competition electric gyro slicer with 120 mm blade
UYAR T3120 Competition Electric Gyro Slicer 110-230v.
  • Dost 120: 120 mm blade, gear-driven with more torque, rated up to 200 kg / 440 lb a day.
  • UYAR T3120: 120 mm blade, pistol grip, rated up to 150 kg / 330 lb a day. Sani recommends it for high-volume restaurants doing about 200 lb a day or more.
  • UYAR S3100 Plus: 100 mm blade, pistol grip, rated about 120 kg / 260 lb a day.

A 120 mm blade gives a wider cut and more meat per slice. Smaller stands may not need that much. An 80 mm slicer such as the Dost 080 (60 kg / 150 lb) is lighter in the hand. See every model in our electric slicers collection, or read how to choose an electric gyro knife.

Plan for a backup slicer

At a stand, the backup is not a luxury. If a fuse goes or a cable gets damaged mid-event, a second slicer keeps the line moving. It also lets you run one slicer per meat if you serve chicken and beef or lamb, each with its own blade.

Power at the venue

The Dost and Ceylan Devran slicers are 115V models. UYAR power supplies switch automatically between 110V and 220V and protect against over-current, over-temperature, over-voltage and short circuits. All of our slicers can also run on a generator. Ask the venue what outlets you will have before you arrive.

Training seasonal staff

Concession staff change often. An electric slicer helps here: the guard sets the thickness, so new staff turn out the same portion as experienced ones. Sani says anyone can learn it in about 10 minutes. The slicer also keeps the hand about 4 to 5 inches farther from the burners than a manual knife.

Our how-to videos and operating manuals are a good start for training. For slicing technique, see how to slice gyro meat off a cone.

Spares that save an event

Keep a small box of spares at the stand:

Serrated replacement circular blade for the Dost 80
Dost 80 Serrated Circular Blade.
  • A spare blade. Replace blades when the diameter has worn down by 5 to 7 mm.
  • Spare fuses. Staff use the spare and forget to replace it.
  • Sharpeners, the blade-removal pin and a screwdriver.

The right parts for each model are in our parts collection, and blades are in our blade fit guide. If you also run a truck, our food truck slicer guide covers the tight-space version of this setup.

Between seasons

Clean every slicer with as little water as possible before storing it. Water getting into the motor housing is the most common repair we see. If a machine is running rough, call us before you ship it to our gyro slicer repair service.

Buying from Gyrosknife: We are the exclusive UYAR distributor in the United States and Canada, and the authorized service provider for every slicer we sell. New slicers come with a 1-year warranty, and repairs come with a 6-month warranty on the replaced parts. Returns: 14 days on everything we sell (refund policy). We ship within the US and to Canada (shipping policy).

Frequently asked questions

What concession equipment do I need for a gyro stand?

A vertical broiler sized to your cone, a high-capacity electric gyro slicer plus a backup, smooth and serrated blades, sharpeners, spare fuses, pans and holding equipment, and a power plan for the venue.

Which gyro slicer handles stadium-size rushes?

Look at the high-capacity models: the Dost 120 (rated up to 200 kg / 440 lb a day), the UYAR T3120 (150 kg / 330 lb) and the UYAR S3100 Plus (about 120 kg / 260 lb).

Do I need a backup slicer at a concession stand?

We suggest one. If a fuse or cable fails during an event, a second slicer keeps you selling. It also lets you run one slicer per meat.

Can gyro slicers run on a generator at outdoor events?

Yes. All of our slicers can run on a generator. Dost and Ceylan Devran models are 115V, and UYAR power supplies switch automatically between 110V and 220V.

How far ahead should I order a vertical broiler?

The product pages list a lead time of 14 to 16 weeks on AutoDoner broilers. Order before your season starts.
