Which Replacement Blade Fits My Gyro Slicer? Blade Fit and Replacement Guide

The fastest way to order the right gyro slicer blade is to start with your machine's model number. Every slicer takes its own blade size, and blades are not shared across sizes. Use the chart below, then pick your edge.

Smooth vs serrated vs hybrid fine tooth

  • Smooth: a plain edge for clean slices.
  • Serrated: a toothed edge.
  • Hybrid fine tooth (UYAR Ultracut): fine teeth on an Ultracut blade.

Mixed Blade Pair (Serrated + Smooth) for Dost 080.

Our advice: use a smooth blade for chicken, pork, gyro and donair cones, and a serrated blade for lamb or beef shawarma (stacked meat).

Proficut vs Ultracut

  • Proficut: steel hardness 52-54 HRC. Needs sharpening every day.
  • Ultracut: steel hardness 55-58 HRC. Needs sharpening 2 to 3 times a week.

When to replace a blade instead of sharpening it

Keep sharpening with the sharpeners in the box (daily for Proficut and Dost blades). Replace the blade when its diameter has worn down by 5 to 7 mm. For example, replace an 80 mm blade when it measures about 75 mm.

How to change the blade

Dost, UYAR and Devran slicers come with a metal locking pin for blade removal. See also our how-to videos and operating manuals.

  1. Unplug the slicer from the power supply.
  2. Remove the blade cover.
  3. Use the metal locking pin to line up the opening on the blade with the opening on the plastic head housing, then push the pin down through the housing. Turn the blade left and right to check it is locked.
  4. Remove the blade screw with a flathead screwdriver.
  5. Remove the blade.

Use caution: blades are very sharp!

A common mix-up: Dost 80 output cables

Not a blade, but often ordered alongside one: the Dost 80 has two output cables. Use the pre-March 2021 cable for machines bought before March 2021, and the newer cable for later ones.
