How to Slice Gyro Meat Off a Cone with a Gyro Meat Shaver
A good gyro cone can still turn into a bad sandwich if it is sliced badly. Thick chunks dry out, ragged edges fall apart, and a cone that should feed a full shift runs out early.
This guide covers how to slice gyro meat off a cone with an electric gyro meat shaver, also called a gyro knife or gyro slicer. It is written for restaurant crews, not home cooks.
What a gyro meat shaver is
A gyro shaver is a handheld motor with a spinning circular blade and an adjustable guard. The guard sets how thick each slice is, so every pass cuts the same. The slicers we sell set thickness from 0 to 10 mm.

If you are still choosing a machine, start with how to choose an electric gyro knife. This guide is only about technique.
Before you start slicing
- Check the blade. A sharp blade cuts clean slices. A dull one tears the meat and works the motor harder.
- Set the thickness. Pick one setting for your menu and keep it there.
- Have a pan ready. Slices should drop straight into a pan under the cut.
- Check the fuse drawer. Every slicer ships with a spare fuse. Make sure it is still there before a busy shift.
How to slice gyro meat off a cone
- Wait for the outside to brown. Only slice the cooked outer layer. The inside keeps cooking on the spit.
- Hold the shaver against the cone with the guard flat on the meat. The guard controls the thickness, so let it ride on the surface.
- Start at the top and pull down in one smooth pass. Keep a steady speed. Don't press into the cone or saw back and forth.
- Work across the browned face. Move over one blade width and make the next pass.
- Let that side go back to the heat. Slice another browned side while the one you cut browns again.
- Keep your hand clear of the heat. The slicer's length helps here. Sani says it keeps your hand "extra 4 or 5 inches" farther from the burners than a manual knife.

Thickness: thin and even wins
Thin, even slices give you more portions per cone and more consistent plates. The guard does the hard part. The skill is keeping it flat and moving at one steady pace.

If slices come out uneven, the usual causes are a dull blade, pressing too hard, or a guard that has moved. Reset the guard to your setting and try again.
Speed: let the blade do the work
The motor spins the blade. What you control is how fast you move the slicer down the cone. Slow, steady passes cut cleaner than fast ones.
Bigger cones need more torque. The 120 mm Dost 120 runs at lower rpm with more torque and is rated up to 200 kg / 440 lb a day. The 120 mm UYAR T3120 is rated up to 150 kg / 330 lb a day. For smaller cones, an 80 mm Dost 080 or Ceylan Devran is lighter in the hand. See every model in our electric slicers collection.
Sharpening angle
Sharpen a smooth blade once a day, best at the end of the day when the blade is clean. Sani's method:

- Open the thickness guard to the maximum.
- With the blade running, hold the diamond sharpener or stone against the bottom of the blade at about 15 to 20 degrees.
- Move it in and out a few times. It takes under 10 seconds.
- Don't sharpen the top at an angle. If you touch the top at all, hold the sharpener flat for 1 to 2 seconds only.
Serrated blades are different. Most of our customers replace them when they get dull. The full routine is in our sharpening and maintenance guide.
Mistakes that cost you meat (and repairs)
- Running a dull blade. "When the blade gets really dull, it puts way more strain on the motor itself," Sani says. The motor is the most expensive part of the machine.
- Too much water when cleaning. Water getting into the motor housing is the most common repair we see. None of our slicers are dishwasher safe. Use as little water as possible.
- No spare fuse. Staff use the spare and nobody replaces it. Keep extra Dost 80 fuses or Devran fuses on the shelf.
- Worn-out blades. Replace a blade when its diameter has worn down by 5 to 7 mm. Find yours in the blade fit guide.

Frequently asked questions
How do you slice gyro meat off a cone?
Wait for the outside to brown, hold the gyro shaver with its guard flat on the meat, and pull down from top to bottom in smooth, steady passes. Slice only the cooked layer and let that side go back to the heat.
How thick should gyro meat slices be?
That depends on your menu. The slicers we sell adjust from 0 to 10 mm. Pick one setting and keep it, so every plate gets the same portion.
What is a gyro meat shaver?
Another name for an electric gyro knife or gyro slicer: a handheld motor with a spinning circular blade and an adjustable thickness guard.
How often should I sharpen a gyro shaver blade?
Once a day for smooth blades, at the end of the day. Sharpen the bottom of the blade at about 15 to 20 degrees with the blade running and the guard opened to the maximum.
Why is my gyro slicer cutting unevenly?
Usually a dull blade, pressing too hard into the cone, or a thickness guard that has moved. Sharpen or replace the blade, reset the guard and use slow, steady passes.
