Customer Story: How Luna Grill Keeps Its Dost 080 Gyro Slicers Running Across Locations

Some of our customers order once. Others become part of the routine. Luna Grill is one of the second kind. Its buying accounts have ordered from Gyrosknife since 2019, and the orders keep coming in 2026.

This story is built from our own order history. It shows what a multi-location restaurant buys from us, and why.

Luna Grill at a glance

  • Customer since: 2019
  • Buying accounts on file: three, in La Quinta and Rancho Santa Margarita, California, and Richardson, Texas
  • Orders: nearly 300 across those accounts
  • Main slicer: the Dost 080 Water Resistant Electric Slicer (115 volt)
  • What they reorder: slicers, plus the small parts that keep them running

One slicer model across locations

Luna Grill's recent orders center on one machine, the Dost 080. When a restaurant group standardizes on one slicer, a lot gets easier:

Dost 080 water resistant electric gyro knife head
Dost 080 Water Resistant Electric Slicer (115 volt).
  • Training is the same everywhere. Staff who move between locations already know the machine.
  • Parts are interchangeable. A spare thumbscrew or fuse from one store fits the slicer at another.
  • Ordering is simple. The purchasing team reorders the same part numbers every time.

The Dost 080 is an 80 mm, 115-volt electric gyro knife. It weighs 830 g (1.82 lb) and is rated for up to 60 kg / 150 lb of meat a day. In the box, it comes with an extra blade, a diamond sharpener and a stone sharpener, a spare fuse and a pin for blade removal.

What a busy restaurant group reorders

The interesting part of Luna Grill's order history is not the slicers. It is the parts. Their most recent orders include:

Serrated replacement circular blade for the Dost 80
Dost 80 Serrated Circular Blade.

That pattern matches what we see across our long-time restaurant customers. Repeat orders are mostly consumables and small parts, not new machines. A thumbscrew gets lost in a wash sink. A cover cracks. A fuse is used and nobody orders another.

Sani, who runs Gyrosknife, hears about the fuse one often. Owners call because the spare is gone, usually because an employee already used it. "Because of $2 part, they cannot use the machine," he says.

The output cable detail

One line in Luna Grill's history is worth pointing out to any Dost 80 owner. The Dost 80 has two output cables: one for machines bought before March 2021 and one for machines bought after. A restaurant group that has bought slicers over several years may have both. Check the purchase date before you reorder.

Dost 80 output cable for knives made before March 2021

Our blade fit guide covers this mix-up, and every Dost 80 part is in Dost 80 parts.

What multi-location restaurants can take from this

If you run more than one store, a few habits make slicers last longer and cost less:

  • Pick one model and stick to it. It keeps training and parts simple.
  • Stock the small parts at every location. Fuses, thumbscrews, a cover and a spare blade.
  • Keep a spare blade on the shelf. Replace blades when the diameter has worn down by 5 to 7 mm.
  • Write down the cleaning routine. Water getting into the motor housing is the most common repair we see. Use as little water as possible, and never use the dishwasher.
  • Call before you ship. Many problems can be sorted out by phone. For the rest, our gyro slicer repair service inspects the machine and sends an estimate first.

The full care routine is in our sharpening and maintenance guide.

Other long-time restaurant customers

Luna Grill is not alone. Other restaurants have ordered from us for years, including Ethos Greek Bistro in Wilton Manors, Florida (since 2020), Nupa in Maple Grove, Minnesota (since 2018), and Miami Subs Grill in Pembroke Pines, Florida (2017 to 2024). Like Luna Grill, they mostly reorder blades, sharpeners, fuses and screws.
