How to Sharpen, Clean and Maintain an Electric Gyro Knife
A sharp blade and a clean, greased head keep an electric gyro knife cutting evenly and stop most breakdowns before they start. Here is a simple routine for Dost, UYAR and Ceylan Devran slicers, plus what to check when one stops working.
Daily routine at a glance
- Sharpen the blade once a day.
- Clean the knife after service, following your model's rules below.
- Check the blade, blade cover and screws for wear.
- UYAR: re-grease every 3 months.
How to sharpen a gyro knife blade
Dost and Devran slicers come with a diamond sharpener and a stone sharpener; UYAR slicers come with a sharpening stone. Diamond or stone is personal preference; both work. The diamond sharpener is better quality, lasts longer and does not break. Proficut and Dost blades need sharpening every day; UYAR Ultracut blades 2 to 3 times a week. Replacements: Dost 80 diamond sharpener, Dost 80 sharpening stone, Dost 120 diamond sharpener, Devran diamond sharpener, Devran sharpening stone.

Cleaning by brand
- UYAR: the handpiece is not dishwasher safe; don't submerge it for more than 30 minutes; keep the power supply dry. Unplug the XLR connector to clean the knife separately.
- Dost: rated IP64 (water-resistant) but not dishwasher safe. The XLR plug lets you unplug the knife to clean it. See How to clean a Dost slicer below for the step-by-step (Dost 090 and Dost 120).
- Ceylan Devran: rated IP64 and easy to clean. Not dishwasher safe.

How to clean a Dost slicer
None of our slicers are dishwasher safe. These steps follow Sani's Dost 090 and Dost 120 cleaning videos.
- Unplug the slicer (Dost 090: unplug the cable at the handle base; Dost 120: unplug from the power supply box).
- Loosen the side thumb screw and remove the front cover.
- Loosen the second side screw and remove the ring guard.
- Remove the center screw and take off the blade, holding it by the edges. On the Dost 120, turn the slicer upside down so the blade drops into your hand.
- Wash the blade, ring guard and front cover in warm soapy water, then rinse under running water.
- Wipe the motor unit with a damp cloth. Keep the power supply box and plug away from water.
- Reassemble: blade and center screw, ring guard (snug its screw with a Phillips screwdriver), then the front cover and its thumb screw.

Greasing UYAR slicers
UYAR's product pages say regular re-greasing is required. Use the UYAR Gyro Slicer Grease Syringe 2-Pack, and see the "Regreasing 90mm 80mm Uyar Slicer" video on our videos page. Grease every 3 months.

Wear parts worth keeping on hand
Fuses, thumbscrews, a spare blade and sharpeners are small and easy to lose. For a Dost 80, that means the fuse, M4 thumbscrew, protective cover and a spare blade. Other models: all parts.

Troubleshooting: the slicer won't turn on
- Check the fuse first; every slicer ships with a spare (Dost 80 fuse, Devran fuse). We have fuse-change videos for Dost and Devran.
- If a new fuse doesn't help, the cause may be the switch, the output cable or the power supply.
- Still dead? Call us first at 1-877-394-8227, then send it in.

Frequently asked questions
How often should I sharpen my gyro knife?
Once a day for Proficut and Dost blades; UYAR Ultracut blades 2 to 3 times a week. Every Dost and Devran slicer ships with a diamond sharpener and a stone sharpener, and UYAR slicers include a sharpening stone.
Diamond sharpener or stone?
Personal preference; both work fine. The diamond sharpener is better quality, lasts longer and does not break.
Can I put my electric gyro knife in the dishwasher?
No. None of our slicers are dishwasher safe. For Dost models, unplug the slicer, remove the front cover, ring guard and blade, wash those parts in warm soapy water, wipe the motor unit with a damp cloth, and keep the power supply box and plug away from water. UYAR handpieces should not be submerged for more than 30 minutes. Dost slicers and the Ceylan Devran are rated IP64. See How to clean a Dost slicer above.
How often do I grease a UYAR slicer?
UYAR slicers need regular re-greasing with the UYAR grease syringe. Grease every 3 months.
My slicer won't turn on. What should I check?
Check the fuse first. Every slicer ships with a spare. If a new fuse doesn't fix it, the cause may be the switch, the output cable or the power supply. Send it to us for diagnosis.
Who repairs Dost, UYAR and Ceylan Devran slicers in the US?
